Total Time: 50 mins
Cuisine: Chinese
Serves: 4 servings

Ingredients

  1. 300g long beans, trimmed
  2. 200g ground pork
  3. 2 tablespoons soy sauce
  4. 1 tablespoon rice vinegar
  5. 2 cloves garlic, minced
  6. 1 tablespoon ginger, minced
  7. 1 tablespoon chili oil
  8. Salt to taste

Instructions

  1. Wash and trim the long beans, cutting them into 2-inch segments. Pat the beans dry with paper towels to remove excess moisture.
  2. In a small bowl, mix ground pork with 1 tablespoon soy sauce, minced garlic, and minced ginger. Allow the meat to marinate for 10 minutes at room temperature.
  3. Heat a large wok or skillet over medium-high heat. Add a small amount of cooking oil and spread the marinated ground pork evenly. Cook the pork until it's fully browned and slightly crispy, breaking it into small crumbles.
  4. Remove the cooked pork from the wok and set aside. In the same wok, add the long beans and stir-fry for 3-4 minutes until they start to soften but remain slightly crisp.
  5. Return the cooked pork to the wok with the beans. Add remaining soy sauce, rice vinegar, and chili oil. Stir-fry everything together for an additional 2-3 minutes.
  6. Taste and adjust seasoning with salt if needed. The dish should have a balance of savory, tangy, and slightly spicy flavors.
  7. Transfer to a serving plate and garnish with additional chopped green onions or sesame seeds if desired. Serve hot as a side dish or with steamed rice.
