Cook Time: 10 mins
Total Time: 20 mins
Cuisine: Mexican
Serves: 2 servings

Ingredients

  1. 2 large flour tortillas
  2. 200g cooked chicken, shredded
  3. 100g shredded cheese (cheddar or Monterey Jack)
  4. 1 bell pepper, sliced
  5. 1 tablespoon olive oil
  6. Salt and pepper to taste

Instructions

  1. Gather all your ingredients: 2 large flour tortillas, 200g cooked shredded chicken, 100g shredded cheese (cheddar or Monterey Jack), 1 bell pepper (sliced), 1 tablespoon olive oil, and salt and pepper to taste.
  2. Heat a skillet or grill pan over medium heat. Add the olive oil and allow it to warm up for about a minute.
  3. Add the sliced bell pepper to the skillet. Sauté for about 3-4 minutes until they are softened and slightly charred. Season with salt and pepper to taste.
  4. Once the bell peppers are cooked, remove them from the skillet and set aside.
  5. In the same skillet, place one flour tortilla on the bottom. On half of the tortilla, layer half of the shredded chicken, half of the sautéed bell peppers, and half of the shredded cheese.
  6. Fold the tortilla in half to cover the filling. Cook for about 2-3 minutes on one side until the tortilla is golden brown and the cheese begins to melt.
  7. Carefully flip the quesadilla using a spatula and cook the other side for an additional 2-3 minutes until golden brown and the cheese is fully melted.
  8. Remove the quesadilla from the skillet and let it cool for a minute before slicing it into wedges.
  9. Repeat the process with the second tortilla and remaining ingredients to make another quesadilla.
  10. Serve the grilled chicken quesadillas warm with your choice of salsa, guacamole, or sour cream.

Tips

  1. Use room temperature tortillas to ensure even heating and prevent tearing
  2. Make sure your skillet or grill pan is preheated to medium heat for the perfect golden-brown crisp
  3. Don't overload your quesadilla - too many ingredients can prevent proper melting and make flipping difficult
  4. Use a non-stick skillet or lightly grease your pan to prevent sticking
  5. Press down gently with a spatula while cooking to help the cheese melt and ingredients adhere
  6. Let the quesadilla rest for a minute after cooking to allow the cheese to set and make cutting easier
  7. For extra flavor, consider adding some fresh herbs like cilantro or a dash of hot sauce before serving
