  1. Begin by gathering all your ingredients: fresh crab meat, rice noodles, ripe tomatoes, firm tofu, fish sauce, green onions, fresh herbs (basil and cilantro), chili peppers, and salt. Ensure everything is clean and ready for use.
  2. Start by preparing the rice noodles according to the package instructions. Usually, this involves soaking them in hot water for about 10-15 minutes until they are soft. Once done, drain and set aside.
  3. Next, prepare the broth. In a large pot, add about 6 cups of water and bring it to a boil. While waiting for the water to boil, chop the tomatoes into wedges and set them aside.
  4. Once the water is boiling, add the chopped tomatoes to the pot. Let them simmer for about 5-7 minutes until they soften and start to release their juices.
  5. While the tomatoes are cooking, cut the tofu into small cubes. In a separate pan, heat a little oil over medium heat and gently fry the tofu until it is golden brown on all sides. This should take about 5-7 minutes. Once done, remove the tofu from the heat and set aside.
  6. After the tomatoes have cooked down, add the crab meat to the pot. If using fresh crab, ensure it is cleaned and picked from the shell. Stir gently to combine and let it cook for another 5 minutes.
